Yes — that is exactly what we cater here. Around Khandala ghat the venues we work are hill villas and resort lawns. Khandala sits inside our Lonavala to Khandala run, alongside Lonavala, Kamshet, Karla, Pawna Lake, Mulshi. Lonavala and Khandala are the outer edge of our standard service run from Pune; Kamshet, Karla and the Pawna-Mulshi lakeside venues are served by the same travelling brigade, and anything beyond is quoted with travel and logistics on top.

A house party runs ₹900–₹1,600 per plate — that is the band this menu normally lands in, and it is typical of circulating starters, two live counters, 100 guests and above. Across everything we cater the outer envelope is ₹450–₹2,200 per plate. The rate already covers chefs and counter cooks for every station, uniformed stewards and an on-site supervisor and venue recce and counter layout plan before the date; gST on the invoice, premium proteins, imported cheese and out-of-season produce and generator or power backup where the venue cannot supply it are quoted separately so nothing arrives as a surprise.

At 250 guests — the size these bookings usually run to — we plan 3-4 live counters and 10-12 service staff, with 16-18 dishes on the menu and 4 hrs of setup. The ratios behind that are one live counter per 75 guests and one steward per 25 guests, or one steward per 12 guests for plated service. Because Khandala work is mostly hill villas and resort lawns, at a villa, farmhouse or resort the kitchen travels with us, so the cold chain, gas, power and water are all planned as if the site has none and anything left behind cannot be fetched mid-event.

On a boat there is no kitchen, no room to plate and no way to send anything back: the menu is finished ashore, packed cold and carried on by hand in what a single crossing allows. In practical terms we need a jetty load-in window, and a headcount fixed before the boat leaves. We confirm it at the recce before the date rather than on the morning of the event.

Two to three weeks is comfortable for most Khandala dates. Six to ten weeks for October to February weddings and the Diwali corporate season. Short-notice bookings taken when the kitchen has capacity. This belt is weekend-loaded and monsoon-heavy in a way the city is not. Resort and lawn bookings cluster Friday to Sunday, so a Saturday inside the October-to-February peak is the hardest date on the calendar to hold. From June to September the ghats take heavy rain and every open-lawn plan is built with covered service and its own power, because the equipment travels up with the brigade and cannot be swapped out on the day.

Yes. Any menu we cater, this one included, can be cooked pure vegetarian, Jain or satvik on a separate line with separate utensils and separate storage. A second line means a second counter, so in Khandala — where we are working hill villas and resort lawns — the layout is planned for it at the recce rather than squeezed in later. The tasting happens before you confirm, so the menu is signed off before anything is paid.
