Japanese Catering questions

Where does the fish come from and how is it kept cold?

Salmon and tuna come through the same Mumbai importers who supply Pune's Japanese restaurants, driven down overnight and held in our own cold boxes at the venue. Fish is portioned at the counter, not hours ahead.

How many vegetarian sushi varieties can you actually do?

Six or more as standard — avocado and cucumber maki, veg tempura roll, asparagus and cream cheese, inari, mango-avocado, and a shiitake nigiri. They are rolled on a separate board with a separate knife and mat, before any fish is cut.

Will you serve raw fish at an outdoor event?

Not on an open ground in summer or through the monsoon — the cold chain cannot be guaranteed, and we will say so rather than risk it. We switch to torched, cured and cooked rolls, tempura and the robata grill instead.

Is the sushi rolled at the venue or brought ready-made?

Rice is cooked and seasoned in the kitchen; rolling, slicing and nigiri pressing happen at the counter in front of guests. Sushi that has been sitting for two hours is not worth serving.

Can you cook Japanese food without alcohol?

Yes. Mirin and sake appear in teriyaki and simmering liquids as standard, and we substitute them with a rice vinegar and apple juice reduction on request for families who need the menu alcohol-free.

How far ahead should we book?

Six to ten weeks for October to February weddings and the Diwali corporate season. Outside that, two to three weeks is usually comfortable, and short-notice bookings taken when the kitchen has capacity.

Can we taste the menu before we confirm?

Yes. We arrange a tasting for confirmed enquiries, and the final dish list, spice levels and sweetness are locked after it rather than before. Sharing the date, venue and guest count gets you a written per-plate quote the same day.
