Jain pastes are rebuilt without garlic and shallot and carried by lemongrass, galangal, coriander root and kaffir lime. The som tam is made without dried shrimp and without garlic.
Vegan is close to the default here: every curry is coconut milk rather than cream, and the mango sticky rice is vegan as it stands.

Fish sauce and shrimp paste live on the non-vegetarian side of the counter and never cross to the vegetarian wok. It is the single thing that goes wrong at a Thai counter run carelessly.
Setting the chilli level per guest slows the line slightly. Worth knowing when the service window is tight — at a corporate lunch we pre-set two heat levels instead.
Lemongrass, galangal and kaffir lime are cut on the day. Nothing on this counter survives being cooked in advance and reheated, which is why it is a live counter and not a chafing dish.
