The vegetarian wok is a separate ring with its own oil, ladles and tossing spoons. Chilli paneer tossed in the wok that just made chilli chicken is not vegetarian, so we do not do it.
Jain Hakka noodles and fried rice are cooked without onion, garlic or spring onion, with cabbage, capsicum and beans carrying the texture instead. The sauces are rebuilt too — most bottled Chinese sauces are garlic-based.
Vegan is easy at this counter: the base sauces are soy, chilli and vinegar. Only the honey chilli potato and any egg fried rice need swapping, and both have a version.

The wok throws heat and oil vapour upward. It needs three feet clear behind the chef and cannot stand under a low false ceiling, a smoke detector or a sprinkler head.
Monsoon dates are straightforward — the counter runs indoors — but it should not sit in a doorway draught. A cross-breeze drops the wok temperature and noodles turn greasy instead of smoky.
