How many counters do we actually need?

Plan on one live counter per 75 guests, with each counter clearing 75-100 guests per hour per counter. The common mistake is many dishes on few counters, which produces queues and lukewarm food.

What does each counter need from the venue?

Roughly eight by six feet of floor space with three feet clear behind the chef, a 15A power point or approved gas, and cold holding within ten metres for the mise en place. We confirm all of it at the recce.

Can we book a single counter without a full menu?

Yes — counter-wise booking is a standard format. One chaat counter for a house party or one pasta counter alongside your own caterer's buffet are both things we do.

Can the counters carry our branding?

Yes. Counter facades take printed panels, and we fit them on the day. You supply the artwork; the print and fitting are quoted separately.

Our venue bans open flame. Which counters still work?

Pasta, dosa, chaat, sushi, waffle, ice cream and every drinks counter run on induction or need no heat at all. Tandoor and charcoal grill are the two that genuinely need a flame, and an electric tandoor covers breads and paneer if that is the compromise.

How do you stop a queue building at the popular counter?

Two approach sides per counter instead of one line, and the counters people rush — chaat, pasta, dessert — placed away from the entrance so the crowd spreads through the room rather than bunching at the door.

How far ahead should we book?

Six to ten weeks for October to February weddings and the Diwali corporate season. Outside that, two to three weeks is usually comfortable, and short-notice bookings taken when the kitchen has capacity.

Can we taste the menu before we confirm?

Yes. We arrange a tasting for confirmed enquiries, and the final dish list, spice levels and sweetness are locked after it rather than before. Sharing the date, venue and guest count gets you a written per-plate quote the same day.
