That is a counter-count question rather than a speed question. Each station clears 75-100 guests per hour per counter, so a short break for a large delegate list needs several parallel stations positioned outside the hall doors, not one long table.

Boxed lunch or buffet for a working lunch?

Boxed if delegates are returning to sessions on a tight schedule or eating at their seats; buffet if there is a genuine break and a separate dining area. Boxed lunches are also easier to allocate against dietary declarations.

Our headcount will change. How late can we confirm?

We work to a confirmed number the day before, with a tolerance either side agreed at booking. For multi-day conferences we adjust day by day against the actual registration count.

Can you run a speaker or green room separately?

Yes — a separate hospitality setup with its own replenishment, running to different timings from the main breaks, which is usually what speakers actually need.

How do you handle delegate dietary declarations?

Send us the collected declarations and we plan named portions for the specific requirements and label everything else at the counter. Vegetarian, Jain, vegan and allergen lines are prepared separately, not picked out of the main buffet.

How far ahead should we book?

Six to ten weeks for October to February weddings and the Diwali corporate season. Outside that, two to three weeks is usually comfortable, and short-notice bookings taken when the kitchen has capacity.
