Hot and cold are held separately, which is why this counter needs both a power point and chilled holding. Sharing one with the ice cream counter's freezer is what trips a circuit.
Live jalebi means hot oil in a room of standing guests, so the fryer sits at the back of the counter and never at the guest edge.
Patisserie and mousse pots soften quickly outside air conditioning. At an open-lawn function the cold section is replenished in small batches rather than laid out in full at the start.
