A satvik and fasting menu that works at scale
Satvik cooking is fresh, same-day food without onion or garlic, without fermented ingredients, and without anything left over from the day before. Root vegetables are allowed — this is the line people most often confuse with Jain, where they are not.
Fasting food (upvas, vrat) is a stricter list again: no grain, no lentils, no common salt. It runs on sendha namak (rock salt), samak rice, rajgira, kuttu and singhara flour, sabudana, peanut, potato, fruit and dairy.

Satvik, fasting and no-onion-no-garlic rules
Satvik means cooked fresh on the day, without onion, garlic or fermented ingredients, and without reheating yesterday's food. Unlike a Jain menu, root vegetables including potato are permitted — the two get conflated constantly, and getting it wrong in either direction spoils the meal for the guests it was meant for.
For fasting days the list narrows again. No grain, no lentils, no common salt: only sendha namak, samak rice, rajgira, kuttu and singhara flours, sabudana, peanut, potato, fruit and dairy. Navratri, Ekadashi, Sankashti and Mahashivratri all get their own version, and the family's own practice decides which.
Prasad and bhog are cooked separately again, before anything else is prepared, in vessels kept only for that purpose, and are never tasted by the kitchen during cooking. Cooks working the satvik line do not handle the onion-garlic line on the same shift.

Logistics, timings and venue rules across the Pune belt
Pune venues are strict about load-in windows, lift access, gas cylinders and open-flame counters. We survey the venue before the event, confirm what the society or hotel allows, and design the counter layout around it.
Panchgani to Mahabaleshwar is a good example. Destination weddings and resort celebrations in the hill-station belt south of Pune — Panchgani, Mahabaleshwar, Wai and Satara — with our chefs, counters and equipment travelling up from Pune for every event.
Our standard run is four hours on site before service for buffets and six hours for a full wedding spread, with service staff at one steward per 25 guests for buffets and one steward per 12 guests for plated service. Everything is cleared and the space handed back clean before the team leaves.

Peak dates need six to ten weeks: October to February weddings and the Diwali corporate season. Everything else is usually comfortable at two to three weeks, and we do take short-notice bookings when the kitchen has capacity.
