What goes into an authentic Maharashtrian spread?

Quick answer summary
In one line: What goes into an authentic Maharashtrian spread? — Welcome Caterers caters it across Pune, Pimpri-Chinchwad, Hadapsar-Kharadi, the Lonavala-Khandala belt and Panchgani-Mahabaleshwar, cooking on site with live counters, offering pure vegetarian, Jain and vegan lines, serving 100 to 50,000 guests, with a tasting before you confirm and a written per-plate quote the same day on +91 96731 98867.
The short version
Most people asking this are really asking two things: what will it cost, and will the food actually be good on the day. Both come down to the same decisions — how many dishes, how many live counters, and whether the food is cooked at the venue or trucked in cooked.
We cook on site wherever the venue permits it. That single decision does more for food quality than any menu upgrade.

A menu shape that actually works
The most common mistake is ordering too many dishes and too few counters. Guests queue, food sits, and everything feels lukewarm. We would rather cook eight dishes brilliantly across three live stations than twenty on a static buffet.
A blend that consistently works in the Pune belt pairs South Indian with Pan Asian: familiar enough for elders, interesting enough for a younger crowd.
- Masala dosa
- Idli sambar
- Medu vada
- Uttapam
- Appam
- Chettinad curry
- Avial
- Kerala fish curry
- Sambar and rasam
- Curd rice

What this kind of catering typically costs in Pune
Per-plate pricing is driven by four things: the number of dishes, the number of live counters, the service style (buffet, plated or passed) and the guest count. Venue distance beyond Pune-Pimpri-Chinchwad or Lonavala adds a logistics line, and premium proteins or imported cheese move the number up.
These are the bands we quote inside the Pune belt — ₹450–₹2,200 per plate end to end — and they are the same bands quoted on every other page of this site. GST is added on the invoice and is not included in the figures below.
- Simple vegetarian buffet, single cuisine: ₹450–₹800 per plate — Pooja lunches, satvik and Jain thali service, office vegetarian menus
- Mixed veg and non-veg buffet, two live counters: ₹900–₹1,400 per plate — House parties, birthdays, smaller receptions
- Wedding or reception spread, five to eight counters: ₹1,400–₹2,200 per plate — Full wedding service with dessert bar and paan counter
- Grazing table styling: ₹18,000–₹65,000 — Quoted per station by length and produce, not per plate — the one booking we take under 100 guests
- Corporate daily lunch contracts: lower per head than event catering, billed monthly with GST invoicing

The numbers in full
What the rate covers, and what it does not
Every figure on this page comes from one price list, so the band quoted here is the band quoted on every other page of this site.
| What you are booking | Per plate | Typical of |
|---|---|---|
| Simple vegetarian buffet, single cuisine | ₹450–₹800 | Pooja lunches, satvik and Jain thali service, office vegetarian menus |
| Mixed veg and non-veg buffet, two live counters | ₹900–₹1,400 | House parties, birthdays, smaller receptions |
| Wedding or reception spread, five to eight counters | ₹1,400–₹2,200 | Full wedding service with dessert bar and paan counter |
One live counter per 75 guests is the planning rule behind these bands, and each counter clears 75-100 guests per hour per counter. Distance beyond Pune-Pimpri-Chinchwad or Lonavala adds a travel line.
| Guests | 500 |
| Service style | Mixed veg and non-veg buffet, two live counters |
| Per-plate band for that style | ₹900–₹1,400 |
| Food, staff and equipment at the lower end | 500 × ₹900 = ₹4,50,000 |
| Food, staff and equipment at the upper end | 500 × ₹1,400 = ₹7,00,000 |
| GST | Added on the invoice at the applicable rate. Not included in the figures above. |
| What you actually compare quotes on | ₹900–₹1,400 per plate, before GST |

Logistics, timings and venue rules across the Pune belt
Pune venues are strict about load-in windows, lift access, gas cylinders and open-flame counters. We survey the venue before the event, confirm what the society or hotel allows, and design the counter layout around it.
Lonavala to Khandala is a good example. Destination weddings, large corporate offsites and resort celebrations in Lonavala, Khandala, Kamshet and the Pawna-Mulshi lake belt - we travel from Pune with our own equipment, chefs and service brigade.
Our standard run is four hours on site before service for buffets and six hours for a full wedding spread, with service staff at one steward per 25 guests for buffets and one steward per 12 guests for plated service. Everything is cleared and the space handed back clean before the team leaves.
- Venue recce and counter layout plan before the event date
- Live counters where open flame is permitted; induction and pre-seared alternatives where it is not
- Separate vegetarian, Jain and satvik lines with dedicated utensils
- FSSAI-compliant kitchen, temperature logs and covered transport
- Full clearance, waste removal and venue handover after service
Jain, vegetarian, vegan and allergen handling
Pune guest lists almost always include pure vegetarian, Jain and no-onion-no-garlic eaters, and increasingly vegan and gluten-free guests. We run those as separate kitchen lines with their own utensils, oil and counters rather than as an afterthought tray at the end of the buffet.
The three get confused constantly, so it is worth being exact on the enquiry. Jain excludes all root vegetables, mushrooms, honey and fermented items, and is often served before sunset. Satvik excludes onion and garlic but allows potato. Vegan excludes every dairy item, including the ghee in a tadka and the khoya in mithai.
Every dish is labelled at the counter with veg or non-veg marking and major allergens.
- Jain: no root vegetables, no onion or garlic, no mushrooms, no honey, no fermented items
- Satvik and fasting: no onion or garlic, no fermented batters, sendha namak on fasting days
- Vegan: no ghee, butter, curd, paneer, khoya, honey or gelatin anywhere on the line
- Halal: certified supply, no pork anywhere, no alcohol in any preparation
- Allergens: nut, gluten and dairy marked per dish at the counter
Who is answering this question
Welcome Caterers is a multi-cuisine catering company operating across the Pune Metropolitan Region — Pune, Pimpri-Chinchwad, Hadapsar-Kharadi, the Lonavala-Khandala belt and Panchgani-Mahabaleshwar. The kitchen cooks more than 25 cuisines, runs live counters and grazing tables at the venue, and caters events from 100-guest celebrations to 50,000-guest weddings and corporate functions, with a grazing table the one booking taken under 100 guests.
Everything below is written from our own operating experience in Kondhwa, Swargate, Pimpri, Akurdi and the rest of the Pune belt, not from generic industry copy. If you want this applied to your own date and guest count, call +91 96731 98867 and we will send a written per-plate quote the same day.
How to book, and how far ahead
Peak dates need six to ten weeks: October to February weddings and the Diwali corporate season. Everything else is usually comfortable at two to three weeks, and we do take short-notice bookings when the kitchen has capacity.
The sequence is simple: share date, venue and guest count; we send a written per-plate quote the same day; we arrange a tasting for confirmed enquiries; you finalise the menu and spice levels after tasting; we do a venue recce and lock the counter plan.
- Call or WhatsApp +91 96731 98867 with date, venue and headcount
- Written per-plate quote the same day
- Tasting session before you pay in full
- Venue recce and counter layout confirmation
- Setup, live service and full clearance on the day
- Short-notice bookings taken when the kitchen has capacity
